Scandinavian Christmas by Trine Hahnemann

Scandinavian Christmas by Trine Hahnemann is an outstanding cookbook that I love to peruse through over the holidays and over the winter months. I love all the spectacular photography of a warm winter kitchen spilling over with baked goods, candles, and arts and crafts that are not cloyingly over-the top – but rather tastefully understated, yet warm and inviting at the same time. Pastini Di Mandorla. Maltese Almond Cookies

Pastini Di Mandorla are popular almond cookies that are a specialty of Malta. These almond cookies were introduced to me by my friend Georgina who is from Malta. Georgina has been dropping off her almond cookies for over a decade, every time my Dad visits us here in California. Honestly, I never bothered to ask her how to make these cookies since I was getting my supply about twice a year. Continue reading Pastini Di Mandorla. Maltese Almond Cookies

Christmas Sugar Cookies

Oh my gosh, what is it about Christmas sugar cookies that makes them a must have over the holidays?  Maybe it’s the vibrancy of the beautifully decorated cookies or maybe it’s all that sweetness in each and every piece.  Strangely, I haven’t been a fan of sugar cookies, I’ve always found them too sweet, but the temptation of these gorgeous cookies always gets the better of me. Our family loves Mexican hot chocolate. That creamy hot chocolate with cinnamon and a hint of cayenne pepper – yummy 😋!  So when I came upon a hot chocolate recipe in the May issue of Martha Stewart Living Magazine that took the flavors of Mexican hot chocolate and transformed it into a cookie, I had to try it. An added bonus is that the ingredients for these cookies are ingredients I usually have in my pantry.

Cardamom Rosemary Shortbread Cookies with Coconut Oil

I love shortbread. That buttery cookie with just a hint of salt that goes so well with tea is a favored cookie of mine, mainly because it doesn’t compete with my afternoon tea. It satisfies my cookie fix without being too sweet.  So I thought why not try making shortbread cookies at home?  This way I can flavor it with some exotic spices to make it interesting.
