My Signature Greek Yogurt Parfait with Chia Seeds and Fruit

You know the saying, “Necessity is the mother of invention.”  That’s how I came up with my signature Greek yogurt dessert for a lunch I was invited to at my cousins Uma and Nando’s a while back.  It was a super hot day on that Sunday and the thought of making anything in that heat was just daunting.  Even stepping out to the grocery store for ingredients felt oppressive.  For this lunch I was assigned to make dessert and I wanted to make something that did not involve using the oven or the stove.  I had to work with what ingredients were at hand, and what I had was Greek yogurt, berries, chia seeds, and some dried fruits. All Natural Apricot Jam

My friend Rose recently gave us some homemade apricot jam that was over the top delicious!  It tasted like fresh picked apricots in a jar and we were having it by the spoonfuls!  I even asked Rose if she could save another jar for me, as the jam was so good that we were going to finish it pretty fast.  Rose was thrilled to hear the jam tasted great because as I found out she used a new recipe.  It was a jam recipe without pectin or gelatin or preservatives.  It was an all-natural apricot jam! Avocado & Grapefruit Salad

Are you looking for a refreshing salad that is refreshingly simple? Try this avocado and grapefruit salad. I made this salad for a spring lunch I was invited to at my friend Rose’s home.  It was a casual lunch just to get a few of us together.  Rose had black bean soup and corn bread on the menu, and asked the rest of us to bring something that we felt would compliment it.  What we ended up with was a feast that was simple, healthy, and delicious and we were stuffed at the end of it!  This is a menu worth replicating. Spring Greens Salad with Pears, Walnuts, and Gorgonzola.


Here is a salad that looks and tastes like a gourmet salad you might order at a fancy restaurant.  A nice juicy pear is delicious in this salad, and a good Gorgonzola cheese or bleu cheese really gives the entire salad a kick of sophistication.
