Happy Cinco De Mayo!

Hi folks, today is May 5th, the Mexican holiday of Cinco de Mayo. If you’re looking for delicious vegetarian Mexican recipes to celebrate the holiday, read on for a bunch of fun and easy dishes to make.

What is Cinco de Mayo?

Cinco de Mayo, Spanish for “Fifth of May” is an annual celebration held on May 5 to commemorate the anniversary of Mexico’s victory over the French Empire at the Battle of Puebla in 1862. Though this holiday is more popular in the United States than in Mexico, Cinco de Mayo has become associated with the celebration of Mexican American culture.

The observance of Cinco de Mayo began in California where it has been observed annually since 1863. The day gained nationwide popularity in the 1980s when beer, tequila and wine companies started to promote the holiday as a great time to host parties with beer, wine, and tequila.

In honor of this Mexican holiday here are a few of my favorite Mexican dishes made with delicious good for you ingredients, and all supremely delicious!! Best part of these dishes? They are easy to make. Give them a try!

Enchiladas!

We do love our enchiladas in our family! This versatile dish can be made is so many ways. Just stuff tortillas with your favorite veggie blend, cheese and top with enchilada sauce. Then bake and sit back and relax. Serve warm with your favorite margarita and this is one supremely delicious and wholesome meal!

Quesadilla, tacos and more

Quesadillas, soft tacos, crunchy tacos, chille rellenos – you name it all of these can be made vegetarian. With lots of flavor these Mexican favorites are sure to satisfy anyone’s Mexican food craving. Give them a try!

Chille Relleno!

I do love a good chille relleno! It has to be my favorite Mexican dish as long as it’s not loaded with cheese – that just turns me off. But a chille relleno that’s stuffed with veggies and cheese? Now that I can enjoy everyday. Here are a couple of chille rellenos I’ve made at home with veggies and lots of flavor.
