My friend Babita brought Black Bean Salsa and chips, and it was delicious. This salsa and chips dish is a perfect snack for a summertime get together. Especially when we can find juicy tomatoes and fresh corn at the farmer’s markets. I asked Babita for the recipe, and she said she got it from a web site called Show Me the Curry. Here is the link to the recipe for Black Bean and Corn Salsa. I’ve also included the recipe here. Continue reading Black Bean & Corn Salsa
Are you looking for a refreshing salad that is refreshingly simple? Try this avocado and grapefruit salad. I made this salad for a spring lunch I was invited to at my friend Rose’s home. It was a casual lunch just to get a few of us together. Rose had black bean soup and corn bread on the menu, and asked the rest of us to bring something that we felt would compliment it. What we ended up with was a feast that was simple, healthy, and delicious and we were stuffed at the end of it! This is a menu worth replicating. Continue reading Avocado & Grapefruit Salad
