I had this black bean soup for the first time at my friend Rose’s place a while back. I was expecting something thick and heavy when I heard she was making Black Bean Soup, but this soup is surprisingly light and thin and delicious. With some chopped cilantro and a dollop of sour cream, this variation of black bean soup is outstanding.

A dessert in 15 minutes? I couldn’t believe how fast we made this classic Italian dessert- tiramisu. This tiramisu recipe is from our friends Dave and Rose’s cooking lesson in Tuscany, Italy last Fall. The recipe surprised me with how easy it was to make a delicious and decadent classic Italian dessert.

Vegetarian Ragù
Ragù by definition is a thick Italian meat-based pasta sauce. In this recipe however I made a vegetarian version with mushrooms, bell peppers, eggplant, onions and garlic.

This is my go-to recipe when I want to make a quick quesadilla. Every time I’ve served this simple quesadilla to family and guests I’ve always received a “Wow, this is delicious” reaction. I’ve made fancy variations of this recipe by adding sautéed mushrooms and roasted veggies and other condiments, I’ve even added fresh chopped tomatoes, but honestly, I don’t get that unanimous “Wow” reaction that I get when I make my original simple quesadilla.
