I picked up this recipe watching an old episode of Ina Garten’s show Barefoot Contessa on Food Network channel. The episode was all about vegetable side dishes, and this cauliflower dish caught my attention because it was so easy to make and looked scrumptious. - 4 garlic cloves finely crushed
- 1 tbsp ginger paste or shredded fresh ginger
- 1 block paneer or tofu cut into small chunks
- 1 green chili – seeds removed and cut length wise
- 1 tsp cumin seeds
- 2 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp chili powder or paprika
- Cilantro for garnish
- Juice of 1 lemon
- Oil

- 1 white onion finely chopped

- 1/2 tsp crushed red chili peppers
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 tbsp all purpose flour or any nut flour
- 2 cups milk
- 1 cup shredded white cheddar cheese plus more for garnish
- Salt and pepper
- 5-6 basil leaves
- 1 tbsp herbs such as thyme, rosemary or chives.
- 2 slices of bread for croutons
- 1/4 cup cream
